Vegan Pancakes with Salonenque Olive Oil and Lemon

Ingredients :

– 250g wheat flour

– 35g cornstarch

– 500ml soy milk

– 200ml plant-based cream

– 50g Salonenque Olive Oil

– Zest of one lemon

– 50g granulated sugar

– 1/2 tsp salt

 

Preparation :

  1. Pour the flour, cornstarch, sugar, and salt into a bowl and create a well in the center.
  2. In a separate container, mix the cream and plant-based milk.
  3. Pour about a quarter of the liquid into the well and whisk until the flour is saturated with the liquid. Gradually add the rest while continuing to stir.
  4. Add the olive oil, mix well, and zest the lemon using a fine grater.
  5. Cook over high heat, flipping with a spatula once the edges begin to brown.
  6. Add peeled clementine segments.
