The Reflection of our Terroir
PDO Baux-de-Provence
a limestone terroir
The vineyard classified as Protected Designation of Origin Les Baux de Provence, located on the southern slopes of the Alpilles, has been cultivated organically for more than 20 years.
Our vines flourish on deep, well-drained soils, typical of the region and benefit from a typically Mediterranean climate. The mistral blows regularly and protects the land from the cold and rainy periods.
Several grape varieties are grown on the estate, including Grenache noir et blanc, Syrah, Cabernet Sauvignon, Mourvèdre, Roussanne, Marsanne, Rolle, Cinsault and Counoise.

Our know-how
Making the vines talk
At Estoublon, the production of wine begins with a rigorous selection of grapes, followed by their crushing and pressing.
Fermentation then transforms the sugars into alcohol, and then comes the blending stage, where different grape varieties are mixed to balance flavors and complexity.
The wine is then aged in vats or oak barrels, further enriching its profile. The process ends with bottling, allowing the wine to continue to age and develop its aromas and potential.

Passionate about the in-depth understanding and development of terroirs, Victor Joyeux, Technical Director of Estoublon, pays particular attention to respecting the vines and grapes to produce exceptional wines.
From the vineyard to the cellar, it plays an essential role in shaping the identity and distinctive character of Estoublon wines and is the guardian of the Domaine’s know-how.
