The nose combines elegance and complexity, blending notes of lemon zest, lemongrass, and wisteria, enhanced by a touch of fennel, a beautiful saline minerality, and a subtle hint of lychee.
On the palate, the attack is straightforward and dynamic, carried by a beautiful generosity brought by a warmer vintage. Freshness and minerality are harmoniously balanced, with a hint of iodine and a discreet woody note that gives way to a lively, salty finish.

As soon as they arrive at the winery, the bunches selected directly from the vine are placed on a vibrating table, where they undergo a second, very rigorous sorting. They are then pressed whole. The stalks add a little more aromatic complexity, while facilitating the evacuation of the juice. The must is lightly settled, then vinified in 40 hl oak tuns.
The wine is aged for 10 months in these same foudres, to give it roundness while respecting the wine’s “tension”, one of its main characteristics.
