The nose is powerful but with great finesse and elegance, with notes of raspberry, blackcurrant and a few wild hints. The palate is very long, with discreet cocoa notes and a tight, fine tannic structure with a saline tannic grain.
50% Syrah
30% Grenache noir
20% Cabernet-Sauvignon
Volcanic and clay-limestone soils.
North/north-east-facing plots at 430 m altitude.
As soon as they arrive at the winery, the bunches selected directly from the vines are placed on a vibrating table, where they undergo a second, very rigorous sorting. De-stemming, followed by another grain sorting. Fermentation in concrete tanks. Tasting determines the operations to be carried out daily. Ten or so punch-downs for gentle extraction. Reassembly. Malolactic fermentation in French oak barrels.
Part is aged for 10 to 12 months in French oak barrels (225 L, 500 L) and another part in 12 hl foudres. 10% is aged in clay amphora.
